3 Yummy Apple Recipes to Keep Your Weight Steady

Apples are the coolest!

They’re the only fruit that has its own famous quote: “An apple a day keeps the doctor away.” I think that makes apples a celebrity fruit, don’t you?

In addition, the health benefits that come from apples are exponential, including blood sugar control, to keeping us fuller longer, to even potential cancer fighting elements (more on that here). Not to mention that apples are easy to transport and eat on the go, it’s pretty clear that apples are a rock-star fruit.

Fall is apple picking season, so I headed to upstate New York to get my fill of yummy apples and came home with a bushel of honeycrisps.

Of course, I wanted to make sure I took advantage of my apple stash in the most delicious ways possible, so I did some research and discovered that apples are perfect at breakfast, midday, and after dinner.

Oh apples, I love you so!

Here are three apple recipes I’m loving—one for each meal time through the day:

Breakfast: Homemade Yogurt with Apple Compote

For the Apple Compote:

Combine 6 cups diced peeled Granny Smith apples, 1/4 cup brown sugar, 1 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, a pinch of salt and 1/4 cup water in a skillet over medium heat.

Simmer until soft, stirring, about 30 minutes.

CeCe’s Tips:

  • If you don’t have time to make the homemade yogurt, Greek yogurt from the store is just fine.
  • Do you eat breakfast at work? Put the compote in a mason jar and keep it in your office fridge, easy-peasy!

Afternoon Snack: Mini Peanut Butter and Apple Sandwiches

To assemble these sandwiches, core each apple and cut into ¼-inch slices (8 slices per apple). If you won’t be eating these right away, brush the apples slices with lemon juice to keep them from turning brown. Spread two teaspoons of peanut butter on eight apple slices then sprinkle with granola. Top with remaining apple slices, pressing down gently to make the sandwiches.

CeCe’s Tips

  • Use a melon baller to core your apples
  • I swap peanut butter for almond or sunflower butter

Clean Eating Pumpkin Spice Baked Apples

Choose a nice, fresh, delicious apple. Remove the core and place apple in a baking dish.

Fill the core with fruit juice sweetened cranberries, then pour honey down the center, over the cranberries.

Sprinkle ½ tsp. Pumpkin Spice over your apple.

Place your apple in the oven, and bake at 350° F. until you can easily puncture it with a knife. It should be quite soft. This will take about 20 minutes. Remove from oven, and allow it to cool.

Cut open and top with a small handful of walnuts.
